PROPER HANDLING GUIDELINES
STORING: Store ice at 0℉ – 20℉. Lower temps will create brittle ice & it will take longer to temper. Tempering allows the ice to warm-up before use, which prevents cracking when liquid is poured over the ice.
TEMPERING: It is best to temper ice in a refrigerator, ice well, or in the open air until it becomes clear & wet. Temper time varies based on where the ice is tempered. Serve when ice is clear or store in an ice well, ice bucket, or refrigerator. Use within an hour.
Handling: First, separate any cubes that may be frozen together cubes by inserting an ice pick or knife between the joints. Always handle ice with heavy-duty, serrated ice tongs.
Serving: Always pour the beverage over the ice rather than dropping the cube or sphere into a full glass. For the maximum efficiency and minimal dilution always, fill the glass to the level of ice to chill the cocktail.
Refreezing: You may refreeze tempered ice for future use. Be sure to keep ice separated to prevent ice from freezing together.
Stamped or Engraved Ice: If stamping the ice, always pour the drink around the side of the ice rather than over the stamped impression. For engraved ice, place the engraved side down rather than facing up.
